Salmon Apple Salad

Make a healthy (and filling) lunch salad with leftover grilled salmon and crunchy green apples.

I love to use leftovers in creative ways, especially if it works out to make an easy lunch. While trying to incorporate more fish into my diet (omega oils!), I made a salad I really enjoyed using some leftover baked salmon broken up over mixed greens. Here’s what I put in it:

When I put a salad together, I try to use what I have on hand. The golden delicious apples give a sweet crunch to this mix and keep it from being too heavy. I dress my salads with extra virgin olive oil and balsamic vinegar.

I can’t make any nutritional promises, but for me this was yummy, fresh and protein packed. Great for spring.
